Unfortunately, the new controls introduced in recent firmware versions are not currently bypassable.
For some GPSMAP models, those mentioned on this page:

2017.0825 should be sufficient (the latest release WITHOUT the controls mentioned above)

GPSMAP Marine ChartPlotter - Downgrade Procedure- Get an SD (8/16 GB, formatted in FAT32)
- Unpack the Self-Extracting Archive which will automatically copy the GUPDATE.GCD to the SD (folder X:\Garmin, where X: is the letter assigned to your SD)
- Make a BackUp of your Data on the Device (Waypoints, Routes, Traces etc), after the Downgrade procedure a Factory Reset is performed.
NOTE: each error in the procedure that follows causes the file GarminDevice.xml to be written to the folder X:\Garmin. Remember to remove this file before making other attempts.- Make sure that the device is OFF and insert the SD card into Slot 1 (the one on the left).
It is recommended to remove any SD that were present in Slot 2 - Press and hold the key UP arrow (UP Arrow) [ONLY x NON Touch devices]
- Press and hold Power ON button
- After a few seconds the message "HOLDING BOOT BLOCK" appears on the display, continue holding the 2 keys above
- After a few seconds the message "SOFTWARE LOADING" appears on the display.
Continue to hold down the 2 keys mentioned above until the message "LOADER READY" appears, from this moment the keys can be released. - If the Keys are released BEFORE the "LOADER READY" message appears, the procedure fails (read NOTE above).
- During the Firmware Downgrade the wording "SOFTWARE LOADING" remains on the display.
- At the end of the procedure the Device carries out a Factory RESET and then a Reboot.
- After reboot you need to reset all the settings (Preferences, Language, etc)
Further details for Touch Devices:I want to clarify that since little attention is paid to touch devices, here is how to proceed:
- Once the file mentioned in the guide has been downloaded onto the PC, it must be launched. With a double click the software is launched and with an inserted USB stick it will indicate to the software where to copy the extracted files and will indicate the letter that your PC will assign.
- Once this phase is over we move on to the echo. Switch off the device, insert the SD card into the slot and switch on the device without taking your finger off the Power ON key and once a "LOAD FACTORY RESET" message is displayed, release the button.
- Press the Power ON button again and the "SOFTWARE LOADING" message should appear, warning you of the start of the update.
- At the end of the procedure the Device carries out a Factory RESET and then a Reboot.
- After reboot you need to reset all the settings (Preferences, Language, etc)
