Is there a possibility to install multiple Tomtom countrys on one device and how to do that?

Each apk installs with the name as its map coverage, ie, UK & Ireland, France etc.
You can install several apk's at the same time, Android treats then as separate applications, for example I had Europe and UK & Ireland installed at the same time, each worked perfectly.
Just follow the instructions for installing the first one, and then install another, and another...

At this stage I know only of two 1.1 versions: Europe and Italy, the others I found are all based on either of them and don't have a different names.
Still waiting for someone to program a tiny APK deleting the selected map info.
If done manually TT asks what map to use but I have no clue how to create a working APK for that.

@Fatboyfun's. You Are talking about the 1.1.1 version right, cause this treads version is 1.2 and they all got the same .apk
@Downunder35m. You mean we have to wait until each country gets it own .apk otherwise it is impossible to get this working if there isn't a way to get tomtom asking what map to use.

Depends on how many maps you need, two APK's should be enough for normal users...
