If you can't patch your Garmin, try this method which works on my 66sr:
With IMGTool, open your *, img file, then go to "CodePage",

Check all the boxes and put 1252 and "apply". Close IMGTool.
Put the µSD back into the GPS then turn it on, you will see that your card opens. If it is the English language there is nothing else to do.

For the French language and to see the accented names, you must again take out the µSD from the GPS then open it with IMGTool, you open the file *, img and "CodePage", uncheck all the boxes then check the LBL box then you put 65001 then "apply". Then close IMGTool.
It is finished, put the µSD back in the GPS, turn it on and the map should be displayed with the names highlighted.
Be careful, each time the GPS and internal maps are updated, the above manipulation must be repeated otherwise, the map will not be displayed. This has happened to me at least for one map. To try after each update, if it works without doing anything so much the better.

I have found that in GarminDevice.xml

I have a Montana 680 and "TOPO France v6 PRO Entire South" maps are not recognized by my device since it prompts the authentication error at the beginning. However, I can see the m inside BaseCamp properly. This is the first time I have heard about the Universal Firmware Patcher but I want to know if there is a way to generate the GMAPSUPP.UNL file for these particular maps so I don't have to modify anything else.

If the Topo V6 map is unlocked, there is in principle no need to patch the 680.

If you want to change the TYP with ImgTool or TYPChanger of this Topo V6 map I have the TYP that I modified, color, some elements and especially the visibility of GR, GRP and PR, with their original colors.

Since my watch has been updated in 7.35, the map does not work anymore. The codes was in 1252.
Does anyone know if I can do anything to get them working again?

Is the map locked ?

Yes, I think. It's written "Can't Authenticate Maps", but before 7.35 with the same there was no problem

Try putting the code 65001 instead of 1252.
And also try Gimgunlock 0.004 :

I just copied the France Topo v6 IMG files on my F7S Solar, I don't face any error message, but the map (that I can activate successfully for each activity) is only showing blank zones, whereas other OpenStreet Maps are ok with a lot of details.
I wonder if I should patch my watch? Here are the awaited details in case someone can help:

EDIT : I managed to get the map working by modifying the codepage using IMGTool (1252 instead of 65001)
